RAW GINGERSNAP COOKIES BY YOUNG MARRIED CHIC

Gingersnap Cookies! Who doesn’t love those, especially the raw version. These are created by Lifestyle Expert Kris Schoels (one of my favorite people)… She has an incredible blog called YoungMarriedChic.com. Check it out… and try the recipe below.
This is what you need…
- 2/3 cup raw almonds
- 2/3 cup raw or toasted cashews
- 2/3 cup old fashioned oats
- 2 tsp cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ginger
- pinch of sea salt
- Sweetener to taste (I used Stevia- but not much)
- 2 tbsp pure maple syrup or agave
- 1/2 tsp of vanilla extract
- 2 tbsp almond milk, water, or soy milk (as needed, to reach desired consistency)
And this is how you make them….
- Place the almonds, cashews, oats, cinnamon, cloves, ginger, sea salt, and sweetener (very little) in a food processor. Process until the mixture resembles sand or cornmeal.
- Add the maple syrup and vanilla- process until it begins to come together into a ball, it should stick together when you pinch it between your fingers
- Add the milk or water, one tablespoon at a time to make the dough come together a bit more. It should stick together but not be wet. Process
- Using a small scoop, scoop together balls. Place in fridge until a bit firm. Or, if you want to make a crust from it- stick it in the bottom of a pie plate and then refrigerate
- Keep dough in fridge or freezer
