Food tastes so much better when you or others put some love and care into it… This morning I took my time to slice this beautiful organic champagne mango – noticing its magnificance and thanking it for all the nutrients it was giving my body. It is important to simply be aware in the moment and truly taste every bite, of every meal, instead of rushing through to finish (and that includes breakfast).

Promise to continue the raw clarity meal plan soon, was halted due to the engagement, but will be on track asap. xx

RAW GINGERSNAP COOKIES BY YOUNG MARRIED CHIC

Gingersnap Cookies! Who doesn’t love those, especially the raw version. These are created by Lifestyle Expert Kris Schoels (one of my favorite people)… She has an incredible blog called YoungMarriedChic.com. Check it out… and try the recipe below.

This is what you need…

  • 2/3 cup raw almonds
  • 2/3 cup raw or toasted cashews
  • 2/3 cup old fashioned oats
  • 2 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ginger
  • pinch of sea salt
  • Sweetener to taste (I used Stevia- but not much)
  • 2 tbsp pure maple syrup or agave
  • 1/2 tsp of vanilla extract
  • 2 tbsp almond milk, water, or soy milk (as needed, to reach desired consistency)

And this is how you make them….

  • Place the almonds, cashews, oats, cinnamon, cloves, ginger, sea salt, and sweetener (very little) in a food processor. Process until the mixture resembles sand or cornmeal.
  • Add the maple syrup and vanilla- process until it begins to come together into a ball, it should stick together when you pinch it between your fingers
  • Add the milk or water, one tablespoon at a time to make the dough come together a bit more. It should stick together but not be wet. Process
  • Using a small scoop, scoop together balls. Place in fridge until a bit firm. Or, if you want to make a crust from it- stick it in the bottom of a pie plate and then refrigerate
  • Keep dough in fridge or freezer

DAY 4: March 21st

Pre-Breakfast: Warm water with lemon

Breakfast: Kiwi & Celery Greenlicious 

What do you need? 4 ripe kiwis, 1 banana, 3 celery stalks, 2 cups of water

How do you make it? Blend all together – makes a lot so you can save some for later!

*If you cannot make it to lunch on this smoothie, either make more of the smoothie (adding primarily spinach) or have a fruit about 30-60 minutes after (so it’s fully digested).

Lunch: Fresh Salad with my Favorite Mustard Dressing

What do you need? Chopped lettuce, 1 avocado, small yellow tomatoes, walnuts, scallions, yellow bell pepper, olive oil, juice from ½ lemon, Dijon mustard (amounts depend on how hungry you are…)

How do you make it? Add the chopped lettuce, cut up avocado, tomatoes, scallions, bell pepper, and walnuts in a bowl. Mix the olive oil, lemon juice, and Dijon mustard in a dressing flask, pour over salad. Salt if needed. I’m obsessed with this dressing!

Afternoon Snack: Any type of raw bar!

Dinner: Filled Red Peppers (Recipe from Raw Food På Svenska by Erica Palmcrantz – buy her book for many inspirational recipes)

What do you need? 2 dl walnuts (soaked & chopped), 2 dl hazelnuts (soaked& chopped), 2 small carrots (chopped), ca 10 cm of leeks (chopped), 2 tsk tamari, 3 red bell peppers, & arugula.

How do you make it?

  1. Soak the nuts for 8 hours during the night.
  2. Pulse the walnuts, hazelnuts, and the leeks in a blender – separately.
  3. Blend ingredients and add tamari.
  4. Divide bell peppers in half, remove the insides and fill with the blend.
  5. Serve with arugula on the side.

DAY 3: March 20th

Pre-Breakfast: Warm water with lemon

Breakfast: Sweet Chard Shake

What do you need? 1 ripe mango (chopped), 1 ripe banana, 1 cup freshly squeezed orange juice, 2-4 large chard leaves, 1/2 cup ice, 1 tablespoon virgin coconut oil, and fresh berries

How do you make it? Mix all ingredients in a blender and serve in glass with a festive colored straw. Add berries on top!

*If you cannot make it to lunch on this smoothie, either make more of the smoothie (adding primarily spinach) or have a fruit about 30-60 minutes after (so it’s fully digested).

Lunch: Simple Raw Greek Salad

What do you need? ½ cucumber, 1/6 red onion, 2 tomatoes, a pack of hummus, lemon juice, olive oil, Celtic sea salt or Himalayan salt, pepper

How do you make it? Dice the cucumber, red onion, and tomatoes into super small pieces, add two scoops of hummus on top and drizzle some lemon juice and olive if desired. Add salt and pepper.

Afternoon Snack: Banana Ice Cream (Yes, in the middle of the day, just like that)

What do you need? 1 sliced frozen banana, a few walnuts, and raw chocolate pieces (any brand you prefer)

How do you make it? Place the banana in a food processor until one smoothie clump (it will make sense when you see it…), add walnuts and chocolate on top

Dinner: Raw Broccoli and Cauliflower Salad with Creamy Asian Dressing (Recipe from Choosing Raw)

What do you need? 3 heaping cups broccoli florets, 3 heaping cups cauliflower florets, 1 small or 1/2 large red bell pepper, chopped 1/3 cup raisins, 1 inch ginger, 1 cup olive or flax oil, 2 tsp toasted sesame oil, juice of 1 lime, 3 tbsp mellow white miso, 6 pitted dates, 2 tbsp tamari or nama shoyu, 1/3 cup water

How do you make it?

  1. Place the broccoli and cauliflower in a food processor and roughly process. Alternately, chop into small pieces with a big knife.
  2. Transfer to a bowl and add chopped bell pepper and raisins.
  3. Blend all ingredients (starting from ginger to water above) on in a blender on high till creamy and emulsified. Pour over salad.
